Shepherd's Pie Simplified!

My girls love this recipe and eat all of it each time I make it!

9 Russet pototos
 3 T or so of unsweetened almond milk (for the mashed potatoes)
1 can Corn (drained)
1 can Cream of mushroom soup
1 lb of meat (ground burger or ground turkey)
** Optional: we leave out cheese due to allergies but you can add cheddar cheese to the top!

Peel and cook potatoes. Whip mashed potatoes... add the almond milk and garlic salt until creamy.
Cook meat and drain. Add corn and cream of mushroom to meat mixture.
Layer with mashed potatoes on the bottom of an 81/2 by 11 pyrex and then add meat, soup, corn mixture on top.

Bake at 350 for 25min. **Add cheese and bake for additonal 5 minutes or until cooked through! E

WVCC - Soup and Salad!

A wonderful recipe from K.P.

Tuscan Soup

1 Small Onion, chopped
1 Small Carrot, sliced
1 Tablespoon Olive Oil
2 Cans ( 14 1/2oz each) chicken broth
1 Cup Water
3/4 Teaspoon Salt
1/4 Teaspoon Pepper
1 Can (15 to 16oz) Great Northern Beans, Rinsed & Drained
2/3 Cup Uncooked Small Spiral Pasta
3 Cups Thinly Sliced Spinach
1) In a 2-qt saucepan, saute onion and carrot in oil until onion is tender. Add the broth, water, salt, and pepper; bring to a boil. Stir in beans and pasta; return to a boil.
2) Reduce heat; cover and simmer for 15 minutes or unitl pasta and vegetables are tender, stirring occasionally. Add spinach; heat through.
Yield: 4 Servings

WVCC- Hubby's Favorite

 Creamy Bowtie Pasta with Sausage

1 tsp butter or enough to just coat bottom of skillet
Spicy Italian Sausage
heavy cream

-Take sausage out of their casing. ( I usually estimate 2 servings per sausage link).
-Form the meat into 1/2 inch balls. (this is optional. You can throw it all in and treat it like ground beef for those short on time days)
-Melt butter in deep dish skillet.
-place Sausage in skillet and cook on all sides for a couple minutes until the insides are completely
-Remove Sausage from Skillet and drain grease.
(variation: sometimes I'll add a little white wine to deglaze pan after draining grease out... appx 1/2 cup. but it is not necessary)
-Return sausage to skillet.
-Add heavy cream and cook at a medium temperature until it thickens up to your liking.
(variation: you can add cheese to the sauce until it melts. As much as you want. I like either parmesan or pecorino romano.)
-Serve over Farfalle (bowtie) Pasta and add more cheese!

You can add grilled chicken or grilled peppers and onions, fresh tomatoes... so many options!

WVCC - Hubby's Favorite

Cheesecake Sopapillas
Taken from

-2 cans pillsbury butter crescent rolls
-2 (8oz) packages cream cheese (softened)
-1 cup sugar
-1 teaspoon vanilla
-1/4 cup butter (melted)
-Cinnamon & sugar

Unroll and spread 1 can crescent rolls on bottom of un-greased pan. Combine softened cream cheese, sugar, and vanilla. Spread mixture over crescent rolls. Unroll and spread remaining crescent rolls over mixture. Spread melted butter over the top and sprinkle with cinnamon and sugar. Bake at 350 degrees for 20-30 minutes.

Hubby's Delight!

This is a fabulous recipe that my dear friend gave me!! She brought it over as a bed rest meal and we were instantly HOOKED! The girls and the hubby all had seconds ;)

Hubby's Delight

1 lb ground beef
2 cans of 8oz tomato sauce
1 8oz package cooked egg noodles
1 cup cheese (I used motz)

Combine the following in a bowl
1/3 cup chopped green onions
8 oz cream cheese
1 pt cottage cheese
1/4 cup sour cream

Brown meat and drain, mix in tomato sauce
Grease 9 X 13 pan
Spread half the noodles in pan
Spread cheese mixture over noodles
Spread the rest of noodles over cheese mixture
Spread beef mixture over noodles
Cover and bake!

Bake at 350 for 30 min.
Turn oven off remove cover and sprinkle cheese on top. let sit for 5 min in oven!

Creamy Cauliflower Potato Soup!

I got this yummy recipe from my sister!!! We have decided that we will be trying a new soup each week! My hubby challenged me with it so I am going to DO IT!

3 T butter
1 medium onion peeled and diced
1 medium carrot sliced
1 medium celery diced (optional)
1 t thyme
1 head of cauliflower chopped into florettes
2/3 medium potatoes, peeled, and cubed
3 c low sodium veg stalk (I use chicken)
1.5 c whole milk

Melt the butter add veggies, thyme and sautee! Add cauliflower, potatoes and cook for 5 minutes. Add veggie stalk, cover and bring to boil. Simmer for 20 min. Remove lid, take emersion blender and blend until smooth. ** We like the chunks so we don't puree it, I take the potatoes out and after blending add them back in** Add milk and salt and pepper to taste!

Slice warm bread and serve warm :)

Tater Tot Casserole

Amazing recipe from my Mama!

1 bag tater tots (I use frozen)
1 lb ground meat (beef or turkey)
10 oz. chopped broccoli ( I use frozen but you can use fresh)
Small can of fried onions
cheddar cheese
cream of chicken soup

** Sauce **
1/2 cup shredded cheese
1/4 t garlic
1/8 t pepper

Preheat oven to 400. Butter or spray 9X13 and line completely with tater tots.
Bake tater tots only for 10 min

Brown and drain meat, add broccoli, 1/2 onions and stir and pour over tots.

Mix soup, 1/3c milk, seasonings, and 1/2 cup cheese in bowl and pour over casserole.

Cover and bake at 400 for 20 min.

Take off and sprinkle cheese and other half of onions. Let sit in oven turned off for 5 min!
